Local, small batch roasted, veteran owned, Model Citizen Coffee Company's Honduran coffee is certified Organic, Fairtrade, and an example of resilient Honduran farmers. These adaptable locals have weathered the leaf rust plant destruction of 2012 - 2013, overcome the hurdles of poor infrastructure, and found ways to dry beans in a high rainfall climate. This particular lot showcases some of the complex qualities that Hondurans can cultivate despite tribulations.

Honduran coffees are high altitude and strictly hard beans (SHB). The altitude slows the complex sugar process giving the Honduran coffees a sharp acidic taste which is another way of saying that the flavor is bright and not boring.  Honduran coffees make great “milk” coffees, enhancing the caramel flavors contained within the bean.

This is a medium roast and a delicate cup with soft flowering finishes, a complex body, and adventure notes.
