Local, small batch roasted, veteran owned, Model Citizen Coffee Company presents the Costa Rican Tarrazu. This Costa Rican coffee is an experimental natural coffee process invented by Luis Eduardo Campo. The "Termico" process entails leaving the coffee cherry on the tree until it is overripe at which point the cherry is plucked, fermented overnight, and then processed. The fermentation and delayed picking creates a sweet wine flavored coffee. We consider this coffee's answer to wine. It is a super sweet coffee and different than any other coffee you have ever tasted.
